When he was 13 years old, Santana moved with his family from the Dominican Republic to the United States, settling in Queens, New York.
An unintentional enrolment dramatically changed his life in a culinary class offered by the Careers through Culinary Arts Program (C-CAP) during his sophomore year of high school.
When Santana’s teacher saw his immense potential, she urged the 16-year-old to advance his education by doing an internship at Chanterelle, one of New York’s most renowned French eateries, run by Chef David Waltuck.
